I do the same thing. When I do this I plan my nights like this. I have a beef, pork, poultry night a long with italian night and mexican night. I also have a soup night and a casserole night. When I am not doing a one dish type dinner I usually plan an entree, starch and vegetable along with a salad and bread. I do this before I grocery shop every week so that I know what I need to get as well. Good Luck...

A whole baked chicken, stuffing, maybe augratin potatoes, and cranberry sauce. YUMMY! That's on my menu this week. ;)

shirmp scampi(shrimp cooked in olive oil, butter and garlic) with asparagus heated form the can and finish with sugar free chocolate desert (pudding,ice-cream or sugar free chcolate candy)
