Your body language gives of small sign or signals that you don't relay by words. There are many ways to relay body language and they mean many differnt things. It could show that you are uneasy witha situation but it could also mean that you are very self-confident.
Looking someone in the eye when they speak to you gives the speaker the feeling that you are listening and understanding what they are saying; that you are paying attention but not too intensely that you burn a hole through their head because then that would make the speaker uncomfortable and then you would have to read their body language. Fidgeting with your hands or feet show that you are uncomfortable or restless and that you are not at ease being in the situation you are in.
If you are looking for body language to give off while in an interview you must prove that you are calm under stress. Even if you aren't, you can fake it by not waivering in your front such as giving eye contact, nodding your head every now and then and definately start off with a nice, firm handshake. Don't keep crossing and uncrossing your legs, clearing your throat or even shifting in your seat to get comfortable. When you speak, speak clearly and look at the person you are talking to. Sometimes it's not in the words you say but HOW you say it.

We humans are complex creatures, and human communication is complex. Studies have shown that words carry only about 7% of the meaning in communication. The rest is in tone of voice (say "I love you" three times, each time emphasizing a different word) and body language.

Body language:
She: Do you love me?
He: (rolls eyes and grimmaces): Of course I love you.
He: (looks tenderly into her eyes, leans toward her, and gently takes her hand): Of course I love you.

In both cases, he professes his love, but what a difference!

Another example:

Sam: How do I assemble this?
Joe: (looks directly into his eyes and points to the instruction sheet; smiles slightly): Just follow those instructions.
Joe: (looks down his nose at Sam, points to the instruction sheet in a sharp, jabbing motion, twists mouth in a disgusted motion): Just follow those instructions.

Yet another:

Two people conversing on the couch.
Person B is leaning back, looking around, but answering appropriately. Message: paying some attention, but not really interested in the conversation.
Person B is leaning forward, looking at Person A, mostly in A's eyes, making gestures appropriate to the conversation. Saying the same things as in the above example. Message: totally absorbed in the conversation; it's important to him/her.

action speaks louder than words apply here...body language is conveying a message to someone in terms of non verbal ways. Its a tricky one though because at times your receiver may interpret your actions in a different way than you hope.

eye contact speaks of sincerity on the speaker's part. One can actually know if a person is lying to him or not by looking at the eyes of the other person. also sometimes, we may not be aware of it but facial expressions play a role in communicating. same us with eye contact in function. you could actually see the person's true intention and feeling with their facial reactions/expressions....
