You said vegetarian not vegan so I'm assuming you can do milk products.
Mushrooms stuffed with a mixture of feta cheese, basil, and pepper. Bake until cheese starts to bubble.
Brochette which is cocktail bread, smeared with olive oil, place a sun dried tomato atop, and a slice of mozzarella cheese on top of that. Sprinkle with parsley for color and bake till cheese starts to melt slightly.
Cream cheese mixed with chopped pineapple and used to fill in the slot in celery stalks.
Cheese and fruit platters. Experiment with different types of cheeses for an added flare. Do the same with the fruit, try star fruit or kiwi along with different colored grapes etc.
Jello parfaits are always good. Mix fruit into jello and layer in cups with whip cream. Top with a sprig of mint.
Baked bean casserole is made with baked beans placed in the bottom of a casserole dish, mix up corn bread mix in a bowl and pour on top of the baked beans and bake in the oven according to the corn bread recipe.
If you're allowed to use eggs you might want to do mini quiche. A mushroom or spinach variety is always nice. Just use a muffin pan to make them.
Because it is New Years you'll want to stick to finger foods as much as possible so people can chat and nibble, but it's always good to offer those heartier items for those really hungry. Good luck.

What about a Mediterranean theme- there are delicious vegetarian dishes from the Middle East that would impress your guests.
Stuffed vegetables like peppers, zucchini and/or eggplant is a delicious meal for guests and is very tasty with a stuffing of arborio rice, chickpeas, chopped ripe tomatoes, parsley, mint, sauteéd onion, the juice of one lemon, olive oil, red pepper, salt & pepper to taste. The ingredients don't have to be measured precisely, but are listed in the order of predominance to give you an idea of what you need more of and what you need to just "eyeball". This provides lots of protien, looks difficult when it really isn't and is a very satisfying vegetarian meal that I make often even though I'm not a vegetarian.
I would also recommend hummos and pitas with an assortment of fresh raw veggies and olives for appetizers and a nice salad with a tangy dressing such as middle eastern fattoush to either go along with the stuffed veggies or before or after. Then, if you are very much opposed to using eggs, try a cookie recipe for Maamoul, a buttery cookie with a filling of walnuts and cinnamon, dusted with powder sugar. Serve with coffee and a beautiful tray of fresh fruits like melons, berries, grapes etc.

Go buy a cookbook. I recommend Vegetarian Times: Vegetarian Entertaining put out by Macmillan. Not only does it have a New Year's menu, but everything from a Valentine's Day menu, to Christmas, to Thanksgiving, to a Cinco de Mayo menu. I'm sure you will find plenty of dishes in there to cook.

This is the same answer I gave to a gentleman who wanted to cook for his wife.
How about Mushroom tortellini with sage brown butter sauce, bruschetta, and salad?
At the store, pick up some fresh Mushroom tortellini, some fresh sage, and basil (produce section), some baby salad greens, a loaf of Italian bread, sun dried tomato and garlic/olive paste (Greek olive bar), fresh garlic cloves, real butter (sorry, not quite veg, if you don't drink milk, but it really makes the dish), a wedge of Parm. cheese - if you eat dairy. And a nice tort or cake for a desert - or if you don't want that, you can get some fresh berries, and just make a fruit salad with simple syrup and some good wine...
Cook the pasta as instructed on package
Add 1/2 butter to frying pan and 'fry' till it starts to turn brown and smell nutty. Add some shredded sage, and fry sage till wilted. This is the sauce for your pasta. If it's too 'thick' add some water from the pasta. Toss the pasta in the brown butter sauce, and top with fresh sage. Don't forget the fresh grated parm cheese.
For the bread, slice the bread, and lightly brush them with oil. Stick them in the oven for a few minutes to toast them. Then rub the garlic clove over them to give them a hint of garlic flavor. Top them with the tomato garlic/olive mix, drizzle them with olive oil, and put a fresh basil leaf on each slice.
Throw together a quick salad, and you're golden.
I know it sounds like it's a lot of work, but you can get this all done in the amount of time it takes to cook the pasta.

hello,u can plan a menu which is not too heavy and dangerous to health like the one below but needs to be arranged in an order:
sprouted grams
mixed pulses roti[FORMAL INDIAN BREAD] 'n mixed vegetables fry or panner masala
a small of rice
sambar
curd or buttermilk
Science always concentrates on good health and if suppose ur practicals is based on nutritious food/health,I'm damn sure that u'll be selected or awarded with maximum marks.ALL THE BEST AND GOOD LUCK!!!
