I am cooking a roast dinner for my family at the weekend. My brother's girlfriend is a vegetarian and I want to cook something that I can serve with the potatoes and veg that I am cooking to go with the roast meat. Is nut roast a good idea? I havent time to prepare one from scratch. What supermarket in the UK sells the best one? If I dont do nut roast, can you recommend anything else that I can cook easily with the dinner instead?

Sorry, I live outside UK so I can't help you with finding Nut Roast in UK - but I have an easy recipe for it.

Good Luck. :)

Easy Nut Roast (suitable for vegans)

1 small onion, finely chopped
75 g fresh wholemeal breadcrumbs (not packet ones)
150 g nuts, finely chopped (choose one or more from walnuts, brazils, hazel nuts, cashews etc)
1 tbsp olive oil
1 tsp marmite
100ml water (boiled)
½ tsp mixed herbs (or other dried herb)
A little grated lemon zest (optional)
Ground black pepper to taste.

Gently fry the onion in the oil for a couple of minutes. Add the pepper, herbs and lemon zest.
Mix the marmite in the water to make a stock. Add this to the onion and bring to a simmer.
Meanwhile blitz some wholemeal bread in a food processor to make the bread crumbs and then whiz the nuts until finely chopped. You could do them at the same time if your food processor is big enough.
Add the nuts and breadcrumbs to the pan and mix until all the ingredients are combined.
Spoon into a small greased and lined loaf tin and cook for 30-40 mins at 190/gas 5.
Leave to cool in the tin for 10 minutes before serving (otherwise it will collapse, although it will still taste nice!).

I am vegetarian and rather than a nut roast can I suggest that you get a Quorn roast roll which is available from Iceland, Tescos and Asda stores. You just follow the instructions and I would suggest that you serve it with my specialist stuffing recipe. I did this at Christmas and even my friend, who isn't vegetarian, thoroughly enjoyed it. I bought a Paxo chestnut and cranberry stuffing mix, followed the directions on the packet and added to it a quantity of finely chopped chestnuts (these can be bought frozen or tinned) and a quantity of cranberry sauce. This was then baked in the oven and was delicious. Even the meat eaters will enjoy the stuffing. Please make sure that you do not cook the potatoes and veg with any meat products or juices won't you! Also make sure that you get some vegetarian gravy. Hope you try this and that she enjoys it. Good luck!

Sainsburys is a good bed. They do a gorgeous Caldron cougette and tomato one in the vegetarian fridge section or an Ambleside one in the vegetarian freezer section.

Most supermarkets do the Caldron ones anyway. Or you can get good packet mixes in Holland & Barrat.

Instead of nut roast, in the freezer section you can get Quorn lamb cutlets or Quorn chicken roasts. These are both really nice and go well with a traditional sunday dinner.

Nut roast is yuck! Quorn do a "roll" for roasting which is good, maybe you could try that? Make sure that when you cook the food that no animal fats drip or spit into the vegetarian food, it won't be appreciated that's for sure!

What about a gratin of vegetables like zucchini and yellow squash and a warm salad of green beans with finely chopped red onion, crushed garlic, ripe tomatoes, olive oil and balsamic vinegar? You have to use cheese and milk for the gratin, unless anyone has a version using soy substitutes...

What's a nut roast? Is it something only in the UK?

If perhaps it's a fruit it includes seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
