We always bake cakes in my office, wondered if anyone has any nice ideas? A recipe would be lovely....

Hummingbird Cake

INGREDIENTS
3 cups all-purpose flour
2 cups white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/4 cups vegetable oil
3 eggs
1 (8 ounce) can crushed pineapple with juice
2 cups diced bananas
1 cup chopped pecans
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12 cup Bundt pan.
Measure flour, sugar, soda, salt, cinnamon, oil, eggs, vanilla into mixing bowl. Beat until smooth. Stir in pineapple with juice, bananas, and pecans. Pour into prepared pan.
Bake in oven for about 70 minutes. Turn cake out onto rack or plate after cooling for 20 minutes. Cool, and ice with cream cheese icing.

Confetti Cake

2 packages white or yellow cake mix
vanilla frosting
1 package colorful candy sprinkles

Follow cake mix instructions and add sprinkles (confetti) to mixture before pouring into 2 cake rounds (stir sprinkles in gently with only a few strokes). Bake 2 round cakes according to package instructions. Let cool. Spread frosting over top of one cake and cover top with sprinkles. Place one of the cakes on top of the other cake with sprinkles on top. Frost the entire cake. Cover top with sprinkles and toss sprinkles around the sides.
This cake can be made for New Years or Birthday parties. Decorate cake with festive party favors or sparklers.

Pistachio Nut Cake

1 box yellow or white cake mix
1 box (3 ounce) instant pistacho pudding
3 eggs
1 cup carbonated water
1 cup oil
1 cup chopped nuts (any kind you like--pecans work well)
green food coloring

Combine cake mix, pudding mix, eggs, oil, and carbonated water in a large bowl. Beat for 3 minutes. Then stir in nuts. Add a few drops of green food coloring. Pour into a greased 13X9X2 inch pan at 350F (175C) degrees for 30 to 35 minutes.
Cool the cake completely before adding the topping.
Serves 10.

Pistachio Nut Cake Topping

1 envelope of whipped topping mix
1 box (3 ounce) pistachio pudding
1 1/2 cups milk
green food coloring
shredded coconut
chopped nuts
maraschino cherries

Put Whipped topping mix and pistachio pudding mix in a bowl. Add milk. Beat until thick. Add A few drops of foood coloring. Spread over cake.
Cover top of cake with shredded coconut, chopped nuts, and maraschino cherries. Refrigerate for at least two hours before serving.

Cherry and pineapple bundt cake

INGREDIENTS
1 (21 ounce) can cherry pie filling
1 (15 ounce) can crushed pineapple
1 (18.25 ounce) package yellow cake mix
1 cup butter

DIRECTIONS
Lightly grease a Bundt pan. Preheat oven to 325 degrees F (165 degrees C).
Pour pie filling into bottom of bundt pan, and on top of that pour the pineapple. Pour dry cake mix on top of pineapple. Slice butter or margarine over cake mix.
Bake for 35 to 45 minutes. This cake is best when served warm

Scrumptious Strawberry Cake

1 box white cake mix
1/4 cup flour (sifted)
1 box (3 ounce) strawberry gelatin
4 medium eggs
1/2 cup water
3/4 cup vegetable oil
red food coloring
1/2 cup strawberries cut up (or frozen strawberries thawed)

Mix together the cake mix, flour, gelatin, eggs, water, and oil. Beat on medium speed for 3 minutes until smooth. Add a few drops of red food coloring.

Next add strawberries and beat for another minute or so until well mixed. Pour into two greased and floured 9X2 inch round baking pans. Bake at 350F (175C) degrees for 30 to 35 minutes.

Top both cakes with vanilla frosting. Add a few drops of red food coloring to the frosting to get a nice pink color. Place one cake on top of the other and frost the rest of the cake.

Decorate this strawberry cake with fresh strawberries, candied hearts, or sprinkle it with a colorful topping. Use a heart shaped cake pan for fun. Serves 12.

Tasty Banana Cake
2 cups flour
1 cup sugar
3/4 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/2 cup vegetable oil
2 medium eggs
1 teaspoon vanilla
4 medium bananas mashed

Combine the flour, sugar, baking soda, baking powder, salt, and cinnamon. Set aside. Mix oil, eggs, and vanilla then add them.
Beat on medium speed for 3 minutes. Mash the bananas, add to mixture, and beat for one more minute. Pour mixture into two 9X9X2 inch baking pans.
Bake for 30 to 35 minutes in a 350F (175C) degree oven.
Serves 10.

This recipe TASTES like the best homemade chocolate cake ever, but is simple to make (from a mix!)

TRIPLE CHOCOLATE POUNDCAKE
1 box Chocolate cake mix (I use DH Devils Food)
1 box instant choc. pudding (I use Jello brand choc. fudge)
1 cup sour cream
4 eggs
1/2 cup oil
1/2 cup water
1 12-oz. bag chocolate chips (some for cake, some for icing)
2-3 Tbsp HalfnHalf or heavy whipping cream (for icing)

Blend all ing. EXCEPT chocolate chips and halfnhalf. Beat for 3-4 minutes w/electric mixer. Add about 5 oz choc chips to mix and blend well. Mix will be thicker than ordinary cake batter.
Spoon into greased/floured Bundt pan (I use the Baker's Joy spray).
Bake at 350 for 50-55 minutes. You'll know it's done when it sort of gets a big crease in the top. Allow to cool.
Icing is the best part: Heat 2 tbsp halfnhalf and rest of choc chips in the microwave around 30-60sec. (check & stir frequently). Then add more halfnhalf (I've also used plain old milk in a pinch) until it's spreadable but not thin! Then ice your cake once it's cooled. Best chocolate cake in the world!

General rule for making "Homemade cakes" in my opinion: ALWAYS use a mix (much easier than mixing/sifting cake flour, sugar, baking powder etc.) and then keep in mind that oil and butter and sour cream make cakes taste rich, but you need extra eggs or baking powder/soda to give them "lift." For instance in the cake above, you have both oil and sour cream "dragging it down" so you must have 4 eggs. (This is not a light fluffy cake, either.) Another example of this principle is Angel Food cake, which is very light and is made almost entirely of sugar, and eggwhites. A poundcake, on the other hand ,since it is heavy and rich has a pound of butter (4 sticks)in it, and usually NO eggs.

I prefer sponge cakes to any other cakes. Plus with these you can put a topping on or even make it a 2 tier cake which i did for my sister's 21st, by sticking the 2 slices together.Ingredients


6 eggs
6 egg yolks
1 cup sugar
1 cup sifted flour
1/2 cup clarified butter, cooled
1 tsp. vanilla extract


Preheat oven to 350 degrees.

Stir together eggs, yolks, and sugar in a bowl.

Place the bowl in a smaller saucepan containing hot water, but not enough to touch bottom of bowl. Place both over low heat; water should not boil.

Beat the mixture continuously as it warms. You can tell when the beaten eggs are warm enough by dipping a finger into them; not more than 1 drop should fall from your finger.

Remove from heat and beat with an electric mixer at high speed for about 15 minutes, or until the mixture cools and is very fluffy. The genoise mixture will be triple in volume and have the consistency of whipped cream.

Sprinkle flour in the mixture. At the same time gradually add clarified butter and vanilla. Fold into mixture very carefully and delicately.

Grease and lightly flour pans required by your recipe.

Layer cake tins or a jelly roll pan. Pour in the batter.

Bake in a 350 degree oven for 25 to 30 minutes, or until cake is browned lightly and shrinks away form the sides of the pan. Immediately remove cakes from pan or tins and place on rack for cooling.

Easy Chocolate Cake


Some people call this a "dump" cake -- all the ingredients are dumped into one bowl, mixed into a smooth batter, and baked into moist, fudgy layers.

Serving: Yields: 16 servings (one 8-inch 2-layer cake)

Ingredients:

2 cups all-purpose flour
1 1/2 cups whole milk
2/3 cup granulated sugar
2/3 cup dark brown sugar
1/2 cup unsweetened cocoa
3/4 cup butter
3 large eggs
2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Fudgy Cream-Cheese Frosting


1. Make the batter: Preheat oven to 350 degrees F. Using a small brush, lightly coat two 8-inch cake pans with softened butter. Dust with flour and tap out any excess. Set aside. In a large bowl, using a mixer set at low speed, combine the flour and remaining 10 ingredients. Increase mixer speed to medium and continue to beat for 3 more minutes.

2. Bake the cake: Divide the batter equally between the pans and spread evenly. Bake on the middle rack of the oven until the tops spring back when lightly touched. Cool in the cake pans on a wire rack for 10 minutes. Using a knife, loosen the cake layers from the pan sides. Invert cake layers onto the wire rack to cool completely.

3. Frost the cake: Use a serrated knife to level the tops of the cake layers, if necessary. Line the edges of a cake plate with 3-inch-wide strips of waxed or parchment paper and place a cake layer, trimmed side down, on top. Place 1/2 cup Fudgy Cream-Cheese Frosting on top of the layer and spread evenly. Place the second layer on the first and cover the top and sides with the remaining icing. Remove paper strips and serve. Store refrigerated for up to 4 days.

Hi,

I recently made a banana loaf/cake type thing. I loved it which is odd as I can't stand bananas! Its really easy, the shorter the recipe the better and it makes the house smell fab when it's cooking! It's much easier to transport too as it can be wrapped in foil when cooled instead of having to lug a big tin around. I can't find my recipe so I found this one for you:

INGREDIENTS
1/2 cup butter
1 cup white sugar
2 eggs
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.
In a large bowl, sift together flour, baking powder, baking soda, salt. Blend the banana mixture into the flour mixture; stirring just to combine. Fold in the nuts.
Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.

P.S I don't used nuts either!

What I like to make is an Amish Friendship Bread - It's more like a coffee cake though.

It takes some time to make it, because you've got to get the starter going, but once you make it, you'll love it. It's wonderful.

Chocolate cake always goes down well. Make a simple slab cake and get some melting choc to go over the top, cut into fingers, fab and easy. Keep me a piece.

Although James' idea would be fun i think you may get fired if you should get caught. A very simple victoria sponge cake would be my idea, everyone like sponge cake. or you could make some buns - fairy cakes and chocolate cakes so you have a mixture.

asda sell these packets of cake mixtures
there's victoria sponge/ chocolate sponge.

just follow the instructions. it's quite easy! no messy
measuring, just hav to add 6tbsp of water & 1 large egg!

don't forget 2 lightly grease the pan with butta/marge,
den line with baking parchment [grease proof paper.

place on third shelf of oven bake til golden brown, decorate
with melting chocolate & glaced cherries & other decoratives.

sandwich with jam & fresh cream et voila!!!!!!!!!!!!!!!
