I'm a mechanical, so maybe I'm biased, but I've always thought of mech Es as being generalists. So a mech E can get into a lot of different industries. In that sense, there will always be opportunites for them regardless of what may happen in a particular industry. Petroleum engineers will suffer a declining market as we try to move away from that fuel source, aerospace companies have highs and lows, etc. but mech Es have some immunity from this.

probably the best, but the one that will require the most continuing education is going to be computer engineering. structural/civil is always a field you can find work, but it's not always great pay. avoid petroleum at all costs.
any medical (bio/genetic) is, usually, considered a passion career; lots of satisfaction, but not much money BTW, this question has been asked by engineering students/potential students forever-good luck petroleum paid $500 to 1,000 per day; then the bottom dropped out and you could find masters degrees working as cashiers at coffee shops
