For the duration that this immortal considered the mental construct, yes, it would be a certain form of life, albeit a rather controlled and sterile life. The only problem is when this immortal moved on to another mental construct the original creation would slowly degrade within his memory from lack of use/consideration(unless he has some kind of flawless immortal memory or some bs). And when it comes down to it this still would not be a form of life in the strictest sense simply because there was an outside thought controlling it's actions and decisions. It would be a perfectly formed mental puppet.

I think it would take away the joy of the things we see.
Why would you want to home in on an individual cell, and its composition?
Isn't a flower prettier if you take in the whole thing at one time?
Is a rose prettier if you can see its entire composition?
I don't think so.
Lets look at it in another way, Is a complete rose prettier than a microscopic view of a tiny portion of the rose?
I could take that one step further, sometimes things that you have never seen, but can picture in your mind, are prettier than they are when you actually get to see them, including people.
