Because if you have a reaction or emergency on the table throwing up your breakfast puts you at risk for aspiration pneumonia...and is messy.

Any procedure has risks. Most doctors don't want you to eat or drink anything because in some cases it can affect the procedure and other times, they may need to perform emergency surgery and for that, you need to have an empty stomach. My dad had an angiogram done on his heart and they ripped his coronary artery and had to rush him in to open heart surgery.

If you were told not to eat or drink, then stay away from the coffee.

Well it's precautionary. Most of the time, most foods or beverages won't interfere with the test itself, but they do give you medications--usually to relax you. Any medication can cause a reaction, flushing, nausea--and other things. They don't want you to throw up and then aspirate--makes thing really messy. And they don't know when might happen--so to be on the safe side--
don't drink your coffee--it might just complicate and othrwise
routine test. Good Luck
