Although I don't like cheese (except for on a pizza) I think that would ruin the cheese.

Most types of cheese freeze well, although there might sometimes be a difference in texture after freezing. (a little drier, more crumbly).
I freeze cheese sometimes when it's MUCH less expensive to buy a large quantity than just the portion I will use in a couple weeks.
I either shred it & store in freezer bags (labelled with date & type) or cut it into blocks or about 1 cup and freeze the blocks wrapped tighly in a layer of foil (to block out light) and a layer or two of plastic wrap.
Cheese that's kept too long in the fridge will eventually mould, although even that is not harmful, just cut off the nasty bits and the rest of the cheese is still good.
Still, I like to freeze it so that I always have some on hand, and I avoid moulding and loss of food that I've payed good money for.

I put cheese in the freezer quite often.
Cheese is expensive, so when it is on sale I purchase more than I will need.
I usually shred the cheddar, colby, mozzerella, and monterrey jack cheeses, measure out 1 cup, then put it in freezer containers marked with the date.
Any Parmesan, asiago, romano, and fontina cheeses I grate, measure out 1/2 cup and put in freezer bags, then put them in an airtight container, then put in the freezer.
It does not change the taste or texture of the cheeses. I just make sure that I thaw it well if using it on a salad or something that doesn't require cooking. If used in cooking I usually don't even thaw it.
I do not freeze swiss cheese or american process cheese as I remember reading somewhere that it will change the taste.

shredded cheese...yes. It lasts longer and i don't use it that much so it's better to freeze it. I've never put a block of cheese in the freezer. i guess it would be OK...but we eat slices of cheese all the time so it doesn't go off in the time it's in the fridge.

My mom puts cheese in the freezer. The coldness keeps the cheese from spoiling. It kills all germs. If you put the cheese at room temperature, the mold will grow on the cheese. If you put it in the refrigerator, the mold will grow on the cheese, but will take a longer time.
That's the whole reason.

I do it all the time, and have for years. I buy the large blocks at the store and shred it myself at home to save money. I put it in ziplocks and pop them in the freezer. I've never found the flavor to be off.
And by freezing it, you don't have to worry about it going bad in the fridge and have to throw it away. It really cuts down on waste.

Yes I put cheddar in the freezer because i bring back alot of it from england because i live abroad the thing is it lasts longer dosent change the taste but can change the texture a little makes it a bit more crumbly to cut

Some people do this to age the cheese. I happen to prefer young cheese. But some insist that aged cheese has more flavor.

i dont know about different kinds of cheese
but my aunt shreds her cheddar cheese and stores it in a freezer bag, gallon sized
then when she needs a handful she just grabs it out
doesnt change the taste at all in my opinion
