Mushrooms soak up water, not retract it, like other vegetables, so no, don't freeze them raw. Mushrooms are like sponges, and freezing them will cause them to become so watered down, they will lose their flavor and taste awful. Their texture will become like mush, as well. When you go to prepare them all their flavor will be taken out. Yuck. If you want to freeze them, cook them first in a little oil, and seasoning, they should be alright then, as you will have cooked the water out of them. Another hint also, in case you didn't know, is NEVER wash mushroom before cooking. Wipe them off of any dirt with a clean damp dish towel, then prepare them. As I said, water takes away their flavor, and texture, because the mushrooms absorb the water. Happy Cooking!

Never freeze raw mushrooms. You would end up ruining the flavour and texture of the mushrooms once you thaw them. If you must though, I would suggest cooking them first before you freeze them.

A good way to preserve uncooked/fresh mushrooms for a slightly longer period of time is to store them in a paper bag in the crisper section of your refrigerator. This way they would last for about a week and a bit more.

Cook first then freeze, otherwise they do not freeze well
