do people like mexican grill or fajitas for corporate catering or weddings?

Depends on the guests. If you opted to go with a mexican theme, keep the heat to a minimum but offer a hot sauce for the more adventourous. Offer a nice array of fresh toppings with your fajitas so your guests can create their own flavor to their liking. Diced jalapenos, sour cream, fresh pico da gallo would be nice. Avoid guacamole only because it will turn brown on the buffet table (doesn't look appetizing). Keep those tortillas warm too. Make sure that there is plenty of items for your guests.

Mexican food is definately getting more popular. But it would be nice to include a vegetarian option.
