I live in Hawaii where we have access to so many nationalities' foods, in addition to our own specialties. Our ice cream shops carry delicious locally made tropical ice creams, like lilikoi, lychee, mango, coconut, ginger, Kona coffee etc. We also have Asian- influenced red bean, li hing, etc.
I think the most interesting ice cream is mochi-- It can come in various flavors, like mango, strawberry, chocolate, coffee, etc-- Each small ball of ice cream is surrounded with mochi-- a smooth, glutinous pounded rice-- Hard to describe-- but its chewy on the outside, ice cream in the middle. YUM
