Tuna and Sweetcorn Jacket Potato
Real easy to put together and makes a wonderful lunch. Double the recipe for two people.
1 (220 g) can tuna, drained
1/4 cup frozen sweetcorn
2 tablespoons helmans mayonnaise
1/8 teaspoon salt
1/4 teaspoon sugar
1/2 teaspoon butter or margarine
1 large potato

Low Sodium Lunch/Snacks
Tuna Lunch/Snacks
Brunch Lunch/Snacks
Cook potato (with skin) in microwave for approx 10 minutes or until done (depending on size of potato).
Meanwhile put sweetcorn and sugar in saucepan and bring to boil.
Once boiled simmer for a few minutes;drain.
Mix the tuna and and mayonnaise together.
Add the sweetcorn and mix some more.
When potato is cooked, cut with knife through the middle ¾ of the way (do not cut in half) and again the opposite direction making a cross pattern.
Open slightly and place butter inside potato allowing to melt.
Spinkle a little salt over the potato.
Spread tuna mix over and serve with a green salad.

I know the oven is best, but it takes sooooo long, so here is how I do it!

Scrub the spuds and wrap in kitchen paper
Microwave for 5 minutes
prick the skin
Rub in sea salt and olive oil
Wrap in kitchen foil
Bang it in the oven for an hour
Remove foil and then return to oven for half an hour to crisp up skin


To serve, I always scoop the potatoe out of the skin and mash it with grated cheese and branston then re-fill the jackets and pop under the grill for a minute or two

I rub the potato with Olive Oil and then sprinkle on sea salt and throw in the oven. I have read that when you get the potato out of the oven instead of cutting it open you should wrap it in a tea towel and smack it with a wooden spoon- this makes the steam force its way through the potato and makes it extra fluffy! Don't hit too hard and don't prick your potato before baking! I tried this once and it seemed to work!

Prick it, rub some oil into the skin and cook in a hot oven for about an hour. (depending on the size of the potato) Check by inserting a fork. Remove from oven....eat!

For the quickest way i cut a cross on the side to cook quicker and then soften in the microwave. once soft then put in the oven to crisp. When cooked squeeze with a teatowel and the cross will make it open perfectly.

My favourite way is to prick it a few times with a fork, zap it in the microwave for 7 or 8 minutes depending on the size then rub a little oil on tghe skin and bake it in the oven for 15 minutes while I make the rest of my dinner. Comes out nice and crispy.

In the oven. Prick a few small holes into the potato (if you want for added flavour rub some oil and salt into the skin or some butter) The wrap it in foil and cook it til its done! (time will vary according to size)

prick the skin after washing the out side , put in a microwave bowl add Little Wooster sauce and water to the bottom of the bowl on high for 10 minutes , turn spuds over another 10 minutes perfect every time

The oven is best as it makes the potato fluffy inside.

Put the spud in the microwave for 5 - 10 mins.
Whilst doing that, preheat the oven.
When done in microwave, coat the spud with olive oil and cumin seeds - delicious!
Pop into the oven for about 1/2 hour (depending on size of spud)
Enjoy!
