I've only ever roasted Okra in olive oil with other vegetables. Can't recall seeing any sticky goo coming out of it during the cooking process.

Okra contains certain mucilaginous substances. Which is why, when cut, okra releases a sticky substance with thickening properties. The only way to reduce the sticky goo would be to follow a recipe which requires you to fry okra.

Well, that sticky goo is the natural juices of the Okra seeping out. You could try steaming them.

I cooked okra once, and fiound it slimy and horrible, but my boyfriend likes it, and convinced me to give it another go. I did some research and found that it was putting water, or other liquids in the recipe that made it go slimy. I cooked it as a side dish with onions and spices and no liquid and it was perfect!

You mustn't overcook it. My favourite way to cook it is deep fried in batter served with a hot chilli dip. Delicious.

you are overcooking it. boil a pan of water and then plunge the ocra in for only 5 mins. drain and then stir fry in a little olive oil works a treat
