Can't quite remember what it's called, but spaghetti with tomato sauce, meatballs, peanuts, and olives with garlic bread. Easy to make, fancy to look at, great tasting. ^_~

Buy fish fillets that are fresh, and put a dash of olive oil, a pinch of salt, and a little butter. Then just bake it in the oven for about 15 minutes (depends on the temperature and the thickness of the fillet). It's simple and quick, but easy to cook. But the most important thing is that the fish has to be fresh.

Or there's this other recipe I love. Pound a decent amount of slightly sweet(preferably) or plain crackers/biscuits. Then crack a chicken egg, and separate the yolk from the egg white. Slice a piece of pork into thin fillets. Dip each fillet into the egg white, then coat it with the slightly sweet pounded crackers. Then fry it on each side (not deep fry). It cooks quite fast.

Apricot Chicken

Chicken Thigh Fillets skin removed, cut into big chunks
1 pkt French onion soup mix
1 can Apricot nectar

Mix soup powder with nectar, pour over raw chicken in baking dish and bake 180 c (350 F) 40 mins turning once. This can also be cooked on stove top, just cook fillets first then add rest and cook 15 mins. Yumbo Jumbo!

I find Chicken Parmagiana always goes down well and is easy to cook. Lightly pan fry thin chicken fillets. Place in an oven proof dish and cover with a jar of tomato pasta sauce. Sprinkle fresh parmesan and/or grated tasty cheese over chicken and cook in a slow oven for approx 30 mins. Serve with salad or vegies.

Pasta Cheese Casserole
INGREDIENTS:
1 can diced tomatoes (I use the wide fat can to have enough for leftovers 28oz I think it is)
1 can mushroom pieces
diced onion and green pepper to taste (or just use the chunky Italian tomatoes)
cooked pasta of choice (we like shells or the spirals)
shredded cheese of choice
PREPARATION:
Preheat oven to 350 degrees. Place the pasta in a baking dish; add the tomatoes and other veggies. Stir. Top with cheese. Bake until cheese is melted, about 20 minutes. I also like to do this with a container of ricotta or cottage cheese stirred in as well.
Serve with garlic bread and salad.

Mixed Greens and Fruit Salad
This recipe comes from The Diabetic Cookbook. It can be easily adapted for any occassion or season. The variety of fruit and berries can be endless. I have often added grilled chicken or shrimp to make a complete meal. Hope you enjoy!
4 cups torn mixed salad greens
1 cup sliced fresh mushrooms
1/2 cup sliced zucchini
1 cup mixed fruit (Blueberries; Strawberries, quartered; blackberries; raspberries; pineapple; mandarin orange segments)
Dressing
1/3 cup orange juice
4 teaspoons salad oil
4 teaspoons brown mustard
1 1/2 teaspoons sugar
1 1/2 teaspoons snipped fresh mint or 1/4 teaspoon dried mint, crushed
1/4 teaspoon salt
1/8 teaspoon white pepper

< 15 mins Salad dressings
Blueberries Salad dressings
Diabetic Salad dressings
Romantic Salad dressings
In a large salad bowl, mixed together mixed greens, mushrooms, zucchini and fruit.
In a jar combine the dressing ingredients; cover and shake until combined.
Pour over salad just before serving, toss to coat.

Pierre's Fast & Easy Dinner
I was grousing around the kitchen grumbling about there being "nothing to eat", when I discovered 2 medium Walla Walla sweet onions and 6 small homegrown tomatoes my sister, Eve, had given me and I'd forgotten. The freezer yielded several choices of diced and shredded meats. I passed on the chicken, turkey, and pork to settle for some roast beef. Miss Annie's Amazing Beef #46982. It is truly an amazing roast, moist, succulent, and delicious. The rest was just having fun in the kitchen. You can easily do the prep the night before, store in plastic bags in the fridge and have a quick after work meal the next night. Anything frozen will thaw while there overnight. I hope you'll like it.
1/2 lb diced or shredded meat or beef or pork or lamb or chickens or turkey, what have you,cooked,of course
2 tablespoons olive oil
10-12 baby carrots, julienne
2 medium onions, coursely chopped (sweets, yellow, and white all work)
2-3 stalks celery, sliced 1/4 inch thick
3-4 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon whole Greek oregano, well rubbed between your palms.
6 small tomatoes, coursely chopped
salt & freshly ground black pepper, to taste

< 60 mins Main Dish
Vegetables Main Dish
Thaw or otherwise prepare the meat.
Heat a heavy frying pan over medium-high heat.
Add Oil, swirl to coat the pan.
Add the Carrots, Onions, and Celery, toss to coat.
Cover, let cook and steam for 3 minutes.
Un-cover, add Garlic, Red Pepper flakes, and Oregano.
Stir well.
cook for 3 minutes.
Add Tomatoes and Meat.
Mix well.
cook for 15-20 minutes.
Season with salt and pepper to taste.
Serve with Basmati Rice cooked in chicken stock with a Green Cardamom Pod or maybe on Pasta.
Rotini sounds good or perhaps Noodles, yah, Ramen Noodles cooked without the mystery"flavor pack".
This needs some serious exploration.
I think it might lead everywhere.

It is difficult to say, because you do not say what you like or do not like or what meal you want. But, if you want something ready when you get home from work, but that could be left until a bit later I would say that you need to invest in a slow-cooker. You just bung stuff in for as you wish - meat on top of veg, and add a little liquid. Turn it on and off you go!

Hari bhari biryani
Ingredients:

6 Cloves
1 cup Ghee
Salt to taste
3 Carrots, diced
2 Cinnamon stick
½ tsp Garlic paste
1 tsp Cumin seeds
½ tsp Ginger paste
1 cup Peas, shelled
½ tsp Chilli Powder
3 cups Basmati rice
3 tbsp Tomato puree
4 Onions, finely sliced
1 tsp Black Peppercorns
½ cup Coriander leaves
10-12 Cauliflower florets
1 tbsp Khuskhus, ground to a paste
250 gms Paneer, cut into small cubes


Method:
Wash and soak the rice for 30 minutes. Drain and put aside.
Dry roast the cinnamon sticks, cloves, pepprrcorns and cumin seeds. Grind to a powder.
Heat ghee in a wok, fry paneer, drain excess oil and keep aside.
Add onions, fry until golden brown, drain and keep aside.
Reheat a tbsp of ghee in a heavy bottomed vessel and add all vegetables (except paneer and onion), alongwith khuskhus paste, tomato puree, ginger paste, garlic paste, salt, chilli powder and the above roasted masala powder.
Saute for 5-7 minutes. Add half of the onion, followed by rice and 6 cups of water. Cover and cook until, rice becomes
Add coriander leaves, mix carefully, cover tightly and leave to simmer for 5-7 minutes.
Gently mix-in paneer, garnish with fried onions and serve piping

try mcormick they have ready mix
for a 1 whole chicken , 1 pack will do then put butter inside the chicken anda lot of garlic..and bake!!!try to make some potatoes with cayenne pepper and some salt,include this inside the baking pan so that the drippings of the chicken will make the potato taste even great!!and oh,don't forget the soup!!yumm-o!!

Tamater pyaz ki sabzi. just make a tarhka and eat. So simple! When my wife is out I take this as my meal. Realy teasty with Rice.

YOU BUY ONE PACKET OF MAGGI NOODLES.FIRST YOU TAKE A PAN.FOR I STRIP OF NOODLE 1 AND A 1/2 TUMBLER OF WATER,YOU KEEP WATER IN THE PAN,INSIDE THE PACKET YOU WILL SEE ONE MASALA PACKET.YOU PUT THAT.AFTER THE WATER HAS READY,U PUT THE NOODLES AND AFTER IT COOKED YOU CAN EAT WITH ONE EGG AND TOMATO SAUCE.
