Even my husband liked these and he hates ginger!

Ginger Biscuits

Ingredients

2 oz vegan margarine
1 oz sugar
4oz flour
1 teaspoon ground ginger

Blend the margarine with the sugar until it is a smooth paste. Add the ginger and flour and blend thoroughly. If it too dry add a teaspoon of water - it should come together in a dough. Roll out on a floured surface and cut out using a cookie cutter. Place on a greased baking sheet in a 200 degree oven for 10 minutes or until golden brown.

Candy Bar Cookies

You won't find these little goodies on a Thanksgiving buffet, but you can easily whip up a batch this weekend for a post-holiday treat. The not-too-sweet butter cookies are filled with candy bar chunks -- mix and match the varieties -- that melt into the cookies as they bake.

Servings: 36 cookies

Ingredients:

1 1/4 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter, softened
1/2 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup chocolate-covered candy bars, cut into 1/2-inch pieces
Directions:

Preheat the oven to 325 degrees F.

Sift the flour, baking powder and salt. Set aside. In a large bowl using an electric mixer, beat the butter and sugar on medium speed until the mixture looks fluffy and smooth, about 30 seconds.

Blend the egg and vanilla extract into the butter mixture. Stop the mixer and scrape the bowl with a rubber spatula once during this mixing. Decrease the speed to low and add the flour mixture, mixing just until the flour is incorporated. Gently mix in the candy bar pieces.

Drop the batter by large tablespoons onto baking sheets. Bake for approximately 8 minutes, watching to prevent burning. Remove while warm to prevent sticking, and cool on wire racks.

1/2 cup milk-chocolate chips
1/2 cup semisweet chocolate chips

Cream the butter and sugars in a large bowl with an electric mixer on high speed. Lower to medium speed and add the egg and vanilla. Sift together the flour, cocoa, baking soda, baking powder, and salt. On low speed, add the dry mixture to the butter mixture. Beat until fully incorporated. Fold in the chocolate chips.

Form the dough into approximately 1 1/2-inch balls. Place on parchment- or foil-lined baking sheets, 2 inches apart. Bake until centers are just set, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks.
