INGREDIENTS
2 green bell peppers, sliced
1 red bell pepper, sliced
1 onion, thinly sliced
1 cup fresh sliced mushrooms
2 cups diced, cooked chicken meat
1 (.7 ounce) package dry Italian-style salad dressing mix
10 (12 inch) flour tortillas


DIRECTIONS
Cut peppers and onion into thin slices. Do not dice, leave slices long and thin.
Saute peppers and onion in a small amount of oil until tender. Add mushrooms and chicken. Continue to cook on low heat until heated through. Stir in dry salad dressing mix and blend thoroughly.
Warm tortillas and roll mixture inside. If desired top with shredded cheddar cheese, diced tomato and shredded lettuce.

I like strawberrywiine's recipe except, I don't like the Italian seasoning. A Taco seasoning packet is better. The juice of 1 lemon would also make it savory. Though I've never heard of Fajitas with mushrooms before. I guess I'm too close to the Mexican border for that. Also, I've never seen the chicken diced, only sliced 1/8-1/4 inch thick, 2-4 inches long, and as wide as a chicken breast is thick (in other words, thinly slice a chicken breast across the breast, not lengthwise.) And I think that recipe may have just too much green bell pepper.

By the way, to get 2 Cups of chicken it takes 1 to 1 1/2 pounds of boneless, skinless breast meat (depending on how much fat you have to throw away).

This is my own recipe which I make all the time and is very tasty:
Ingredients
1 tbspn oil
1/2 kg chicken cut into thin strips
1 teaspoon fresh or crushed chilli
1 small red onion sliced thinly
1/2 red & 1/2 green capsicum sliced thinly
2 tablespoons Hoi Sin sauce
2 tablespoons Sweet chilli sauce
1 tablespoon sweet soy sauce
Tortillas
Grated cheese
Sour cream

Method:
Fry the chicken strips in oil and chilli until browned. Remove from heat.
Fry the onion and capsicum until soft. Return chicken to pan.
Add the sauces and stir through. Reduce heat to a simmer.

Heat tortillas.
On each tortilla,sprinkle some grated cheese, add some chicken mixture and put a dollop of sour cream on top. Roll up and enjoy!

Vegetarian Frajitas

An all vegetarian version of an otherwise well known meat dish. The name "fajitas" refers to the type of meat used in the traditional version. In this recipe the meat is replaced with onions, sweet peppers, corn and beans

.I N G R E D I E N T S
2 teaspoons vegetable oil
1 cup quartered, sliced onion
1 cup red, green or yellow bell pepper strips
1 (15-ounce) can black, pinto or kidney beans, drained
1/2 cup frozen whole kernel corn
1 (1.25-ounce) package Taco Seasoning Mix
1/3 cup water
1/4 cup chopped fresh cilantro
6 (6-inch) fajita-size flour tortillas, warmed

I N S T R U C T I O N S
Heat vegetable oil in large skillet over medium-high heat. Add onion and bell pepper; cook, stirring occasionally, for 3 to 4 minutes or until vegetables are tender. Stir in beans, corn, fajita seasoning mix and water; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 3 to 4 minutes or until mixture thickens. Remove from heat; stir in cilantro.Spoon 1/2 cup fajita mixture onto each tortilla; fold in half.Hope you like it!!!!!
