Yes it would count. My understanding of communion is there are two important requirements: 1) You must eat the bread and drink from the cup in a way which doesn't dishonor the Lord (1 Cor 11:26 (no mention of wine)); and 2) Love your neighbor as yourself.
I think if there was a flu epidemic of some sort then this would be 'loving your neighbor'.

Sure. Honestly I don't see why not. It's all in what you beleive the substance becomes not what the substance originally was. I always like Communion with milk and oreos myself.
