Does anyone have a recipe for a cold quesadilla? It wasn't grilled or fried.?

I think it had chicken, cream cheese, onions and jalapenos in it, along with some other stuff. Has anyone heard of something like this or made anything like this?

I suppose it is kinda like a roll-up but is more quesadilla-ish, with more spices and stuff. I was looking to see if anyone would have heard of this and would have a recipe for it.

I _think_ what you're looking for is usually called "antojitos."

There aren't a lot of good recipes on-line (see

but they come out pretty well when you just guess at the ingredients.

There are some appetizers called "Roll-Ups" that are made this way... spread w/ cream cheese, then layers of ham, black olive, salsa, green onions, whatever, rolled up, then cut crosswise into little pinwheels. Is that what you're referring to? I don't see why they couldn't be made, left flat, topped w/ another lfour tortilla, and cut into wedges, though.
