It's by weight - it depends on the size of the leaves. On the other hand, it's lettuce -eat all you want.

You can cut an iceberg head of lettuce into an easy 8 wedges for serving. I would think you could get more servings froma head if it were chopped and mixed w/ other salad ingredients. But pre-plating for yoru guests will ensure portion control for you. I would think 1 head of Romaine will get you about 5-6 servings.
