My wife's 2001 Altama acts like it's going to stall out at stop lights, but it corrects itself when given a little gas. It's been going on before any cold weather started and it's getting worse. The car acts like the timing is out of whack when Idleing but seems just fine when we leave the stop light. I suspect it's a fuel-air control issue. What control should I replace or adjust?

It's your air intake sensor. The sensor is telling the car it's cold even when it's not, so the choke stays on and it runs too rich.

you should start with cleaning the throttle body. Ussually thiswill solve idle problems on a fuel injuected car and if it is not the problem it only cost you a can or carb clean and a couple of rags.

Check you sensors around the car. Also, is the check engine light on? That could give you some clues.

Also check for vacuum leaks, make sure ignition wires are good.
