they are different cheeses! Every cheese is what it is because of how its made. They have different things introduced into them to make them curdle and produce whey (the solid in cheese) then they are stored and further cured in different ways. They use acid producing bacteria, or rennin or even vinegar to make the milk curdle and clump up into whey. Its not all made from cows milk as some cheeses use goats milk. Mozzarella is probably the less processed in the bunch and the real deal is stored in liquid. Parmesan is aged and dried, cheddar gets its tang from the bacteria that produces it. Hope this helps.

Mozzarella has a much milder flavor than cheddar and is much softer. I wouldn't recommend substituting cheddar.
