They serve the carrots, green beans and brocoli practically raw. Now, I don't like mushy vegetables either but I do like them to be able to put a fork in them easily. The exception is 5 star restaurants. Of the very rare times I ate at 5 star restaurants, I always got perfect veggies.

most places dont know what they are doing... a properly cooked vegetable should be fork tender (yielding to the touch but firm) most places employ uneducated "cooks" to save money.. at the nice restaurants they actually care about the food and therefore it comes out perfect.

Hmm, there is a wide variety of what people consider "done". I guess they figure that people who like them real tender will be less "offended" by crunchy vegetables than the crunchy people would be by soft. Have you tried telling them you want them a little extra tender? I mean they'll cook the steak or egg however you like it why not be explicit about your veggie.

My husband likes a really tender vegetable too. He loves vegetables but doesn't want them raw unless it's a salad.

Raw vegetables are so much better for you in a nutrition sense.
Sauteed vegetables, which you are complaining about still keep most of the nutrients.
Overcooked vegetables are useless.

So that they taste better and retain nutrients. And if your REALLY want them cooked more you can request it since if they're over-cooked they'd have to discard them down the drain which is money to them.
