I bought a really meaty raw ham bone to make bean soup with. What is the best way to cook the meat? Should I bake the bone in the oven or should I just throw the bone on the soup pot?

I would let the bone simmer in the soup for a couple of hours til the meat it falling off the bone... mmm... but make sure you get all the bones out and cut the meat into bite size pieces before serving.

I just throw the bone in the pot. I boil it for about 30 min (or more if you like it to just fall off the bone) and then take it out to take all the meat off. If you make the soup after that, place the meat in at about five min before you are done. If not (if you want to cook it all together at the same time) take it out at the end of the cooking time to scrape all the meat off then add just before serving.

if you are using raw beans, soak them in water a day ahead, then when you are ready to cook, cover them with water add some salt and bring them to a quick boil for a couple minutes, then discard that water & in that pot add olive oil, sear the ham bone add some water or stock, beans & what ever veggies & seasonings your recipe calls for, bring to a boil and them lower to simmer until beans are soft and meat is falling off the bone.
*** I usually add some chopped onions, garlic, peppers, a can of chopped tomatoes, cumin, oregano & thyme.
*** If using the can beans, sear the bone first, then add the veggies & water/stock & seasonings then after simmering for a while add the beans so they turn in to a big mush.

Toss it in the soup pot. Season it a little first.
