What pans do they Iron Chefs use? the pans can be put directly into the oven.?

All commercial pans bear the NSF symbol. to go into the oven it must be all metal (no platstic)
I use All-clad, but there are other brands
On iron Chef I think it is also All-clad.

There alot of brands that you can use in the oven, most rpofessional chefs like to use Caphalon. They are spendy but well worth it.

I think you will find that they are Cast Iron
