There are three reasons:

Shaft length:
Without getting too technical, the reason is that as loft increases and shaft length decreases, a club becomes easier to master. A shorter shaft makes a club easier to control in the swing (think of baseball where a batter will "choke up" on the bat - essentially, shorten the bat - when he's simply trying to make contact rather than swing for the fences). More loft helps get the ball airborne and adds a little more control to the shot.

Loft and backspin:
Backspin is what naturally happens to the ball when struck successfully, especially with irons. The lower lofted irons (3,4,5) generate less backspin. In contrast, high loft clubs (7,8,9) and wedges have the most spin and thus the ball spins back towards the player once it hits the ground. Backspin is also coveted by novices as a sign of advanced shot-making.

Because it is easier to swing a shorter iron, AND hit the ball square....it is easier to impart backspin on the ball. Back spin is easier to obtain with a shorter iron because it is a more up and down swing and backspin keeps the ball straight as it travels.

Slices and hooks occur when there's more side spin than backspin. Slices are balls overloaded with side spin. The more the side spin, the worse the slice!

This is why the longer shafted lower lofted clubs like the driver, 1, 2 and 3 iron are so much harder to hit.

The golf club is shorter. The shorter the club, the easier it is to hit.

Closer to the ball, takes away room for error on a shorter backswing.

because the amount of back spin a lofted club gives you stops the side spin that creates hooks and slices
