Simple. Psycholgists have determined that 18 holes of golf takes the participant to the absolute last level of frustration possible before he/she kills him/herself and/or his/her playing partner(s). That's why you drink at the 19th hole -- to settle your nerves again. Some golfers have evolved to be able to play more than 18 holes in one day. In the future, only those who can play at least 36 holes in one day will survive -- the rest will kill themselves or be killed on the first hole of their second round.

I prefer the whisky answer to the real one to be honest! The first courses in Scotland were only 12 holes, and then - as the game became more popular - they obtained extra land and settled on 18 holes as a reasonable distance / amount of walking to justify the 18 shots of whisky in the clubhouse! That became the established 'norm' for courses, and has remained like that ever since.

I just saw it on TV, HBO perhaps, that the guy who invented the sports was thinking it takes 18shots of whiskey or bourbon to empty the bottle so he decided 18 hole and that just it. to believe or not we really don't know but the knowledge is quite a "nice to know" already and it is just for them to figure it out if its true or not.

One shot(whiskey) per hole, and when you get to the 19th you can have as many as you want.
