The sell by date is used to insure freshness. It is still good to eat as long as there is no mold on the bread. There is always an exception to this rule do not eat rye bread if it is moldy. It can be dangerous. My family and I have eaten bread and other items that have passed the expiration date. We are still alive and kicking. I hope that I have been some help to you and good luck.

It gives the seller(or grocery) time to put it out. Sort of like a time frame. Ex: You can use my pen for two hours during class.
But now, all foods labels have a use by label and a expiration date. If your milk says use before the 30th, you need to use it before then. They give you this date because the manufacturer calculates when it was bottled, processed, shipped out, and they try and keep you safe. If the expiration date says expires before the 30th.....that's what it means. Don't drink after that day.

That is the shelf life, that means that the store has to sell it before that date. If you keep the bread in the freezer and just take out what you need then you can keep it for several months.

It means it is guaranteed until that date. Often, "expired" bread can be bought at the surplus bread store and is still acceptable to eat. And it is less expensive there also.
