This is my favorite, from Alton Brown:
1 cup half-and-half
3 large eggs
2 tablespoons honey, warmed in microwave for 20 seconds
1/4 teaspoon salt
8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
4 tablespoons butter
In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.
***I add a little cinnamon and vanilla extract to the custard. The point is to make it crispy on the outside and soft and custard-like on the inside.

2 (21 ounce) cans apple pie filling
20 slices white bread
6 eggs
1 1/2 cups milk
1 teaspoon vanilla extract
1/2 cup maple syrup
DIRECTIONS
Grease a 9x13 inch baking pan. In a small bowl, stir together the melted butter, brown sugar and cinnamon.
Spread the sugar mixture into the bottom of the prepared pan. Spread the apple pie filling evenly over the sugar mixture. Layer the bread slices on top of the filling, pressing down as you go. In a medium bowl, beat the eggs with the milk and vanilla. Slowly pour this mixture over the bread, making sure that it is completely absorbed. Cover the pan with aluminum foil and refrigerate overnight.
In the morning, preheat oven to 350 degrees F (175 degrees C).
Place covered pan into the oven and bake at 350 degrees F (175 degrees C) for 60 to 75 minutes. When done remove from oven and turn on broiler. Remove foil and drizzle maple syrup on top of the egg topping; broil for 2 minutes, or until the syrup begins to caramelize. Remove from the oven and let stand for 10 minutes, then cut into squares. Invert the pan onto a serving tray or baking sheet so the apple filling is on top. Serve hot.

I like to soak the bread in the batter so it is nice and saturated. That could take 10 or 15 minutes depending on the bread. I use either challah or cinnamon and raisin bread. For batter, you can use eggs, milk (amount equal to eggs,) vanilla (just a drop,) cinnamon, and nutmeg. Almond extract adds a nice flavor as well (if you're not allergic to nuts.) Some people also like to add plain yogurt or sour cream to the batter.
To make it extra nice, you can cover it in crushed corn flakes, which will give a great crust.
You don't want to cook it too hot or it will burn the outside and leave the middle raw. Make sure you use some butter or oil in the pan.

2 Eggs per person, 2 TBL milk, a pinch of cinnamon, 1 t captain Morgans spiced rum, 2 t sugar, mix well. Spray the bottom of a baking pan with pan spray. Lay bread slices in a single layer in the pan pour eggs mixture over bread. Bake at 325 for 30 minutes. Serve with mixed fruit and fresh whipped cream.

3 eggs, 1 1/2 cup milk, blend this together in a blender or with a mixer. Add two or three capfuls of vanilla. Take your cinnamon and mix it with a little bit of hot water, this will help it blend in with your egg mixture. Dip your day old texas toast in this mix and cook on a really hot pan until golden brown on the outside. Good luck.

eggs milk cinnamon vanilla extract
when u dip it in that add a light coating of olive oil to pan and fry the french toast it will cook till oil is gone makes them nice and stiff and not mushy and soft in the center and ready for confectionary sugar and more cinnamon even works with texas toast thats the best to use or raisin bread

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar

1 loaf (24 inches) French bread, ends trimmed, cut into 18 slices
2 cups fresh or thawed frozen cranberries, divided
1 cup maple-flavored or pancake syrup
2 Tbsp. sugar
BEAT cream cheese, 1/4 cup sugar, vanilla and cinnamon in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing well after each addition. Gradually add milk, beating until well blended.
ARRANGE bread in greased 13x9-inch baking dish; sprinkle with 1 cup of the cranberries. Pour cream cheese mixture over cranberries. Let stand 15 minutes. Meanwhile, preheat oven to 350°F.
BAKE 40 to 45 minutes or until golden brown. Meanwhile, bring syrup just to boil in medium saucepan on medium heat. Add remaining 1 cup cranberries and 2 Tbsp. sugar. Reduce heat to low; simmer 10 minutes, stirring occasionally. Cool slightly. Cut casserole into 9 pieces. Serve topped with the cranberry sauce.

Blueberry French Toast:
1½ hours 30 min prep
6-8 servings
12 slices day-old white bread, crusts removed, cut into 1-inch cubes
2 (8 ounce) packages cream cheese
1 cup fresh blueberries or frozen blueberries
12 eggs
2 cups milk
1/3 cup maple syrup or honey
SAUCE
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup blueberries
1 tablespoon butter
1. Place half of bread cubes in greased 9"x13" baking dish (enough to thoroughly cover bottom of baking dish).
2. Cut cream cheese into 1-inch cubes; place over bread.
3. Top with blueberries and remaining bread.
4. Beat eggs, milk, syrup or honey together and pour over bread.
5. Cover and chill 8 hours or overnight.
6. Remove from refrigerator 30 minutes before baking.
7. Cover and bake at 350 for 30 minute. Uncover and bake 25-30 minute more or until golden brown and the center is set.
8. In saucepan, combine sugar and cornstarch; add water.
9. Bring to a boil; boil 3 minutes, stirring.
10. Stir in blueberries; reduce heat.
11. Simmer 8 to 10 minutes or until berries burst.
12. Stir in butter until melted.

Its all in the bread. Thomas' raisin cinnamon swirl bread is the best! Its got thicker slices than the other raisin cinnamon swirl bread I've seen.
