Depends on how hungry you are. I would say on avg. about 6 - 8 oz. should do it.

Cut up some green, yellow, and red peppers, Julienne style, (means long strips about ¼" wide and 3" lone) to act as a base cover over the platter. Red or yellow onions, sliced round whole pieces, do a good job, or even long green onions will work. The idea is to have the fish up above the top of the platter just a touch so you steam the fish all around!

Place your fish on the sliced vegetables.

Add 2 tablespoons of your favorite wine plus 3 tablespoons of Chicken broth.

Cover with foil. Poke an air hole on right and left sides of foil so you can watch it steam.

Place in your preheated oven at 350° to 375°:
½" - 1" filets - 12 to 15 minutes
1" - 2" filets - 15 to 25 minutes

When the steam begins to come through your small ¼" poke holes, you know you're about 10 minutes away.

The great part of all this is the natural juices of the fish (even the driest fish) will release into the wine and chicken broth or fish stock, whichever you decide to use.

To serve, carefully pull away the foil. Check doneness. If you feel it's still undercooked for any reason, put back in the oven, even opened on top. It's OK! The fish is so juicy by now, it's just simmering in its own natural juices. Serve fish right on your platter. Place on trivet in center of your table. You're on your way to great fish just like Spanek chicken.

I believe the filet o fish is white atlantic cod
