hear was is Orange Cream Fudge


INGREDIENTS:
3 cups white sugar
2/3 cup heavy cream
3/4 cup butter
1 (7 ounce) jar marshmallow cream
1 (11 ounce) package white chocolate chips
3 teaspoons orange extract
12 drops yellow food coloring
9 drops red food coloring

DIRECTIONS:
Grease a 9 x 13 inch pan.
In a medium saucepan over medium heat, combine sugar, cream and butter. Heat to soft ball stage, 234 degrees F (112 degrees C). Remove from heat and stir in marshmallow cream and white chocolate chips; mix well until the chips melt. Reserve 1 cup of mixture and set aside.
To the remaining mixture add orange flavoring, yellow and red food coloring. Stir well and pour into prepared pan. Pour reserved cream mixture on top. Using a knife, swirl layers for decorative effect.
Chill for 2 hours, or until firm, and cut into squares.


done everything perfict and its good but i want it to be like oil smooth like the good kind any tips

You may have taken it past the soft-ball stage, which causes the sugar to crystalize again, causing it to get that gritty texture. It's also possible that your heat was a little high and it cooked faster than you thought. It's always best to use an accurate candy thermometer to guage it right. It took me a ton of tries to get that right back when I first started making fudge.

The thing about fudge is the texture is gritdey! Thats how you can just taste is and say thats FUDGE!!

maybe you didn't stir all the lumps out. maybe try using a mixer. good luck.
