yep try a mixture of ricotta (cottage) cheese and Parmesan and herbs like parsley or Basil

Stuffed Manicotti Recipe
8 manicotti shells, cooked & drained
1/2 lb ground beef
1/2 C chopped onion
1 tsp salt
1 clove garlic, minced
1 T parsley
1/4 tsp basil
1/4 tsp oregano
1 egg, slightly beaten
2 C ricotta cheese
1/3 C grated Parmean
1 can (8 oz) tomato sauce
1 C grated Mozarella cheese (4 oz)
Cook manicotti noodles per package directions. Mix beef, onion, salt, garlic, parsley, basil & oregano. Cook and drain. Mix egg, cottage, cheese, Parmesan cheese. Add in beef mixture. Fill the noodles with the mixture, place in a dish. Pour tomato sauce over, cover. Cook 350°F 30 min. Top with Mozarella cheese, cook another 5 minutes.

Chop fresh basil, garlic, and add grated asiago cheese.
I have also added fresh crab to my mixture and it was good too.
Use a zip lock bag to stuff the shells. Put the cheese mixture in the bag, seal, and cut one of the corners. This will help get the cheese into the manicotti shells.

I think an egg will firm up the filling. You didn't mention what cheese, but a mixture of ricotta, parmesan and mozzarella would be nice, along with maybe some finely-minced onion& garlic& parsley--salt and pepper, of course. Sounds delicious.

Garlic...pine nuts...parsley....salt and pepper...oregano...parm and/or mozzarella cheese....canned diced tomatoes that have been drained VERY WELL and patted dry....beans of any sort....salsa, if you like the southwestern twist thingie....a nice dark green (like spinach) and some nutmeg....browned sausage....etc. etc.

Very versatile. I advise you to go wild and see what you get!

add together ricotta and cottage cheese,(use less cottage) parmesan cheese and an egg to bind it, some spices like, parsley, basil and oregano
