I make my quick and easy meat loaf like this - I love tomatoes -

2 lbs ground beef
1 packet meat loaf seasoning
1 egg
1 can diced tomatoes
1 cup fresh bread crumbs
sprinkle of garlic salt
ketchup

Drain the can of tomatoes before starting.
Preheat over to 350.
Mix all ingredients (except for ketchup) in large bowl.
Press into a loaf pan and bake for an hour.
Drain grease, spread ketchup across the top of the meatloaf, bake for 10 minutes more.
You should drain the grease again before serving.

2 lbs.ground beef,1-pkg Lipton onion soup mix,( or 1 small diced onion with some parsley and paprika) 1/4 cup ketchup, 1/2 cup breadcrumbs, 2eggs, 1/2 cup milk, s&p. If you have some bacon strips, place a few on top before you bake. 1/2 white onion diced small, 4 slices of white bread cubed, 1 egg, splash of milk, salt and pepper to taste. Form your loaf...and I'm sure you know the rest. This is EXTREMELY simple and 'un-fancy'. lol It works for me...my family loves it. You can serve it with catchup, BBQ sauce, or on bread with mayo. I have even (and this is a little fancier) served it on crusty bread with an arugula mayo. I pulse in my food processor arugula leaves and a clove of garlic. I blend the mixture with about a half a jar of mayo. Its a nice condiment and makes a killer sammi. In place of arugala you could probably do any herb you like but in a smaller amount to make an herbed mayo.

Meat Loaf Day...ew, I think I'll stay in bed. I'd rather have a Meat Loaf Day for the singer, and I probably wouldn't get out of bed for that either...but more of a chance.
