I absolutely love this fruit salad with the cream of coconut...
Ambrosia Fruit Salad
(Makes 12 to 16 servings)
* YOU CAN USE ANY BRAND OF WHIPPING CREAM & MARSHMALLOWS YOU WANT.
1 (3-ounce) package cream cheese, softened
1 cup Coco Lopez® Cream of Coconut
2 cups (1 pint) Border or Meadow Gold® Whipping cream,
whipped
2 cups Campfire® Miniature Marshmallows
1 (15-¼-ounce) can crushed pineapple, well drained
1 (11-ounce) can mandarin orange segments, drained
1 (10-ounce) jar maraschino cherries, drained and cut in half
½ cup chopped pecans
In large mixer bowl, beat cheese until fluffy. Gradually add cream of coconut, beating until smooth. Fold in whipped cream. Fold in remaining ingredients. Pour into 8-inch square dish. Cover; refrigerate overnight. Cut into squares; garnish as desired. Refrigerate leftovers.
Individual servings: Spoon ½ cup mixture into 18 (2½-inch) foil baking cups. Proceed as above. (Make 18 servings)

Original recipe yield:

INGREDIENTS
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 (15.25 ounce) can of fruit cocktail (drained)
3 bananas, peeled and sliced
1 pint fresh strawberries, rinsed and sliced
1 (large) can of pineapple chunks (drained)
1/2 honeydew melon, fruit removed with a melon baller or cut in
chunks
1/2 cantaloupe, fruit removed with a melon baller or cut in chunks
DIRECTIONS
In a large bowl, cream together the cream cheese and sweetened condensed milk until smooth. Mix in about 1/4 cup of the reserved fruit cocktail liquid, or to desired consistency. Fold in the fruit cocktail, bananas, strawberries, pineapple chunks, honeydew and cantaloupe. Serve immediately or chill until serving.

Tropical fruit salad with banana cream:
20 min 20 min prep
4 servings
1 mango
1 papaya
1 small pineapple (extra-sweet)
2 oranges, juice of
2 small bananas
1 (7 ounce) container fromage frais with added cream
4 teaspoons dark muscovado sugar
1. Cut a thick slice off each side of the mango to reveal the large, flat stone.
2. Cut the flesh away from the stone, peel the fruit, then cut into slices.
3. Halve the papaya, scoop out the black seeds, peel away the skin then slice the fruit.
4. Cut the top and skin away from the pineapple.
5. Cut it into quarters then core and slice it.
6. Mix the fruits with the juice of the oranges, then chill until ready to serve.
7. Mash the bananas and stir them into the fromage frais.
8. spoon the fruits into bowls and top with the fromage frais and a sprinkling of the muscavado sugar.

FRESH FRUIT SALAD
2 c. chunk pineapple
2 c. water melon balls
2 c. peaches, peeled & sliced
2 c. sliced strawberries
1 c. seedless white grapes
1 fresh pear, peeled & sliced
2 bananas, peeled & sliced
2 oranges, peeled & sliced
Lemon juice
Fruit dressing
Combine all fruits sprinkling lemon juice over fruit as each is prepared. Chill fruits in tight container. Pour fruit dressing over fruit and toss gently when ready to serve.
FRUIT DRESSING:
3/4 c. orange juice
1/4 c. salad oil
1 tbsp. sugar
1/2 tsp. salt
Combine ingredients. Blend good and chill. Serve on fruit salad. Yields 1 cup.

I make right here recipe each trip, and there is in no way any left. all and sundry continually asked for extra! soften a million %. of cream cheese upload a million/2 c. bitter cream Stir the two mutually until thoroughly mixed. upload a million/3 c. granulated sugar and re mixed upload drained culmination ( all which you have listed might artwork nicely, i take advantage of fruit cocktail, peaches pineapple and in specific circumstances a million/2 c. chopped pecans) upload approximately 4 c. Miniature marshmallows mixture nicely - extra appropriate day after immediately

Mix together in large bowl:
1 can (20 oz.) pinapple chunks
1 can (11 oz.) mandarine orange segments
1 1/2 cup seedless grapes
1 cup small marshmellows
1 cup flaked coconut
1/2 cup nuts (walnuts work really well)
Mix together in seperate bowl until creamy:
3/4 cup sour cream
1 tablespoon of sugar
(sounds gross, but trust me it's good)
Combine contents of both bowls, make sure all in first bowl is covered with cream/sugar mix, serve right away or chill first.

this is more like pineapple salad but it's awesome!
1 (12 oz.) cottage cheese
1 (8 oz.) Cool Whip
1 sm. can pineapple
1 sm. box sugar free Jello, any flavor dry
Add nuts and coconut, if desired
Mix together and chill. A dessert that is light and good, but so easy to make.

Just use good fruit and join a little White Port Wine (Dry)

Here's one that my family enjoys.
Cut two granny apples into small pieces into a bowl. Cut two celery sticks into small pieces into the bowl with apples. Add as many chopped pecans as you want. Then get a small carton of low fat cool whip and stir it in with apples, celery, and pecans. Then top it off with low fat shredded cheddar cheese. Put into the fridge for about five minutes, the enjoy. I know it may sound a little weird, but trust me, it taste great.
