i would like to know what cut of beef the restaurants use to make fajitas. it is always tender and not fatty or gristly.

also, do they marinate it (if so with what) and do they cook it in a
skillet or on a grill over an open flame.

can't wait to make some--yum.

We have a restaurant called "Fajita's", and they use marinated flank or skirt steak (chipolte lime based marinade). They partially grill it over an open flame, slice it up, then add it with the peppers and onions to the hot fajita pan they serve it in and let it sizzle till it gets to your table. They're excellent!

1. Sirloin beef cut into thin (1/8 inch) strips.
2. Marinate for 1 hour in 1/2 lemon juice, 1/2 lime juice

I use sirloin, slice it thin, and panfry it with seasonings, onions and peppers.
If you want the more traditional method, you can marinate the steak with lime juice, garlic, salt and pepper for 30 minutes. Grille, broil, or panfry it whole, and then slice it. If grilling you can do the onions and peppers at the same time.

They usually use a marinated flank steak or skirt steak. I prefer flank steak though.
