Ingredients:
6 ounces flour
2 ounces oatmeal
2 ounces soft brown sugar (light brown sugar)
2 ounces butter
2 tablespoons black treacle (molasses)
1 teaspoon of ground ginger
1 teaspoon mixed spices
1 large egg
1 level teaspoon bicarbonate of soda
3 tablespoons milk
Note: In Britain a tablespoon holds 17.7 ml while the American tablespoon holds 14.2 ml so you may have to make some adjustments to the above (British) quantities.
Method:
Line a seven inch square baking tin with greaseproof paper which has been well buttered. Melt the butter, sugar and treacle in a saucepan over a gentle heat. Sieve the flour and bicarbonate of soda into a bowl. Add the oatmeal and spices. Add the melted butter and treacle mixture, a well beaten egg and the milk to the bowl, stirring well until completely blended. Pour into the baking tin and bake in a pre-heated oven at 350F/190C/Gas Mark 4 for about 45 minutes. Allow the cake to cool for ten minutes before turning out onto a wire rack.
Ingredients:
One UK pint (20 fluid ounces or 600ml or two and a half US cups) milk
Half ounce (15g or 2 tablespoons) medium oatmeal
Quarter teaspoon (15g) salt
2 teaspoons (10ml) clear honey (Scottish heather honey if you can!)
1 tablespoon (15ml) whisky (or brandy, if you prefer)
Grated nutmeg or cinnamon sticks to taste
Method:
Add the oatmeal and salt to the milk in a saucepan and bring to the boil, stirring continuously. Remove from the heat allow to stand for ten minutes.
Strain the liquid into a clean saucepan, pressing the oatmeal to extract as much liquid as possible, discarding the oatmeal at the end. Stir in the honey and grated nutmeg plus the whisky or brandy. Reheat until it is almost boiling and serve immediately in mugs. Instead of using nutmeg, you can put a cinnamon stick into each mug and stir the drink in the mug with this between sips.

Teacup of plain flour
Half teacup of milk
Tablespoon of soft brown sugar
3 oz butter or margarine
Level teaspoon salt
Level teaspoon bicarbonate of soda (baking soda)
Method:
Sieve the flour, salt and bicarbonate of soda into a bowl, add the oatmeal and mix. Cut the butter or margarine into small portions and rub into the mixture with your fingers. Add the sugar and mix well. Pour in the milk and mix until you have a stiff but workable dough.
Shake some flour on a worktop, turn the dough onto it and shake a little flour on the top. Roll out thinly (about half an inch thick) and prick over with a fork. Cut into rounds with a scone cutter and place on an oiled baking tray. Bake in a pre-heated oven for 15/20 minutes at 350F/180C/Gas Mark 4. Use a palette knife to lift the biscuits onto a wire coming rack. Store in an airtight tin.

Raspberry Oatmeal Bars
INGREDIENTS
517 g yellow cake mix
200 g quick cooking oats
165 g margarine, melted
340 g raspberry jam
15 ml water
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
In a large bowl, mix together oats, cake mix, and melted margarine so that it makes nice clumps and there is no dry mix left. Press 1/2 of the oats mixture evenly into the bottom the prepared pan. In a separate bowl, mix jam with water, and spread over the crust. Sprinkle the remaining oat mixture evenly over the top.
Bake in the preheated oven for 18 to 23 minutes, or until the top is lightly browned. Cool before cutting into bars.

Oatmeal is an empty canvas. I make a big pot and everyone has their bowl dressed their way. One kid loves them with chocolate chips and bananas. I swirl raspberry preserves in mine. Sometimes I like pecans and cinnamon in the bowl. It's up to you. First buy Old Fashioned Oats. Follow the main recipe on the back of the box and then use your imagination.

40-50 crackers
Old fashioned Swedish Oatmeal Crackers
3 dl rolled oats (oatmeal)
1 dl melted butter, margarine or oil
1½ dl lukewarm milk
1½ dl sugar
1-2 tablespoons Baker´s Ammonia
3½-4 dl flour
1.Stir together oats, edible fat, milk and sugar.
Mix baker´s ammonia with flour and add flour until a dough forms.
Place dough in a cool place overnight.
2.Preheat oven to 250° C (480° F).
On a lightly floured surface, roll out dough thinly, a little at a time.
(You may need to add more flour)
Use an ordinary rolling pin at first and then a cross-hatched rolling pin.
Cut out crackers with a cookie cutter.
(If you don´t own a cross-hatched rolling pin, just prick them with a fork)
3. Arrange crackers on a baking sheet and bake one plate at a time in the middle of the oven for 5-7 minutes or until lightly brown. (Baker´s ammonia smells in the oven, but don´t worry. That smell disappears)
4.Transfer crackers to a rack and cool completely.
Store in an airtight container.

What about having it for breakfast with a variety of toppings? I love brown sugar, a bit of maple syrup and toasted pecans. When they're in season, I slice some strawberries and add a bit of sour cream sweetned with brown sugar on top- sounds weird but it's delicious. I also like sliced apples sauteed in butter and brown sugar added to the oatmeal.

Porridge (Scottish breakfast stuff) - microwave version
half fill bowl with Oats
add sugar + dash of salt, swirl bowl around a little bit to mix them together.
Top bowl up with milk
Microwave at full power for 2.5minutes
top with brown (demerara) sugar, and eat.

my mom makes these really good brownie-type things
it usually has a million chocolate chips, pretzels, marshmallows, oatmeal, etc. and she puts it in the oven.
i'm sorry, i don't know the recipe though =[
