The brine and acid in the pickling solution can weaken the cell walls distorting the amount of fiber but it really doesn't change the cucumber's nutritional content (a modicum of vitamin loss) and would still be considered a vegetable. Raisins are still fruit, changing the way you prepare something can change the nutritional value but it can never make a vegetable a meat or something.
