Wild hog are not hard to trap they like all others, they like free food and that is their down fall.
The younger ones are the better to eat over the older mature hogs.

Fawns are always better than mature deer the meet is more tender
So i would think it would be the same for hogs

I've eaten young pig (not wild) and I've eaten wild game. In both cases they have alot less fat than adult, domesticated animals of the same species and thus less flavor and are dry. So you have to do something to them to make them flavorful and juicy.
For most game, they say to "lard" it, or wrap it in some kind of fat to cook.
As for me, I just fed it to my dog and he was very appreciative.
