If your mum has always fixed it that way, and none of you got food poisoning, then I don't see a problem. If you're concerned about the time, call mum and ask how long you should cook it for. Once you open the pressure cooker, use an instant read thermometer to check for doneness. I have used the auto defrost cycle on my microwave to thaw roasts without any problems. The only thing I do is after putting the weight in and hitting start, I pause it for a minute to figure how many times to rotate the meat. My micro is old and doesn't have one of those deals that circulates the food. You also need to include turning over to thaw the bottom of the roast so it thaws circumfrentially. Yes. You can actually buy sliced beef in gravy which has been cooked and frozen from a shop. Just make sure u cool in down properly first. It is easier if you slice it before freezing. Then you dont have the hassle of cutting after it has thawed out.

yes. probably best to slice first though. ensure meat cooled down to room temp. do this as quick as possible so lay out slices on a plate.
then you can wrap meat in cling film, pop into a freezer bag, label & freeze. Make sure meat fully defrosted before you next use it.
Cooked roast beef is fantastic in a sandwich with sliced yorkie pud, mustard & spread cold gravy on the bread - weird but it gives it savoury moistness!

All meat can be frozen, slice it when cooled and put it in freezer or sandwich bags. Please thoroughly defrost before eating. I do this on a regular basis, it makes life a bit easier in the kitchen.
