This happens when heat is applied to sugar. This makes the product sweeter in taste, and in color, brownish, texture being sticky. Onions can be caramelized because it has sugar....

This is when you are bringing the 'natural' sugars in something to the surface, (such as onions, or slow roasted veggies) by slowly cooking them over heat until they turn a 'caramel' color, or creating or adding sugars to something over all (such as caramel sauce over popcorn and then slow heating in the oven to meld it all together)
Basically, you are chemically altering the item through heat--sloooow heat. YUM. (look for things that have a high content of sugar in them such as corn, carrots, beets, onions etc)

"caramelizing"refers to the natural sugar in food...when food..really any type of food is introduced to heat the natural sugars are drawn out and then brown...hence "caramelizing"

Carmelizing simply means evaporating the liquid and turning it into a carmel-like glaze.
