This is a nice food. It's a Mexican pastry called an empanada. You can fill it with anything, but my favorite is pumpkin. The bread is a D shape & surrounds the filling. These are great especially when warm from the oven. Mole. pronounced molleh, is a rich, flavorful, dark red sauce, heavier than soup but lighter than gravy which is boiled with chicken. Add it when the chicken is nearly cooked, right into the broth.

I never saw couscous served in India when I was there. Maybe polenta would be understood/available.
