With a regular kitchen stove how do i do this preferrably without burning down my house. How hot does the brandy have to be? Cast iron pans good enough?

OK,

You can't use the stove if it's electric, you need direct flame.

Easiest way is to use a soup ladle, half fill it with brandy, then tilt is slightly over a gas flame until it lights.

If you have electric you will need to use a match or lighter to light it

Dont use a glass, some will crack or break due to the heat.

A ladle is great, it might make a small poof when it lights and then will burn blue. It doesn't burn very long unless you use too much. A shot is enough usually..

Normally what I have always seen and done is the brandy is in the pan with the food. As it warms you an tip the pan slightly to let the cooking flame ignite it. Or with a LONG match or simular item ignite it and let it burn out, serve the food.

Don't try to light it with a regular match or lighter... it lights fast and burns hot, it will get your hand.. Use a long match or mabye a piece of kindling or lastly tightly rolled paper... but you dont want yourself or anything flammable directly over that pan when it ignites.

I have done this before and its not as difficult as one might think it is. You could pour the brandy into a little pot with a handle and either use a candle lighter (the kind with a long handle). Strike up a flame with the lighter and then insert the flame into the pot. Or if you are using a gas stove you could tilt the pot slightly till the brandy gets in contact with the flame. But be careful enough to tilt the pot slowly or you might end up spilling the contents on your stove top. Once the alcohol in the brandy is burns up, the flame goes out. So it doesn't really burn for too long if your only using a small amount of brandy.

After cooking your steaks, turn off the stove (gas or electric) and then pour brandy over the steaks and light a match to it using fireplace matches (long stems). The brandy will burn for a brief time and carmelize the meat. Use a high alcohol content brandy if possible. Voila, you're ready to enjoy. Good luck!

This is known as flambe. The brandy is heated in the pan and when the pan is tipped to the flames it will ignite. If, you are using an electric cooker a cigarette lighter can be used. Do not uverdo the brandy, the flames will die in less then a minute so your house should be safe. you could of course call on your local fire brigade to stand by in case you overdo it.

It is better with a gas fire and is called "flambe" in French. The correct technique is to simply put the brandy or Cognac for eg VSOP or XO in with the dish and then slowly tilt the frying pan so that the hot brandy overflows a little bit and catches fire. The flames will follow the brandy back to the frying pan. It adds flavour and aroma to the dish and also is very spectacular. Many fine dining restaurants like Antoine's in New Orleans and La Tour d'Argent in Parsi do their flambe at the diner's tableside. Done properly, you won't set your house on fire. I love flambe dishes! My speciality, especially la Bombe Alaska, Cherries Jubilee and Bananas Foster! Enjoy! {:-)

yes you can put cast iron in a camp fire or oven keep a lid close by!
