I'm doing a quick soak with some northern beans. The water has gotten hot and beans are starting to float to the top. It seems that I heard somewhere that if that happens, the beans are not good. I looked at the expiration date on the package and they're good till Oct. 2007.

If you are washing the beans in cold water and then they float that means a mite has eaten the meat and it is no good but beans can float in hot water - if your still not sure check to see if there is any small black holes in the beans that are floating.
Beans have no experation date - you just have to store them in a place where mite can't get in -either in an air tight container or the freezer

Don't worry about a few beans floating some always do.
Wash the beans in luke warm water it takes about 3 washes to get them real clean.put them in pot ,cover with 2in. of water bring to a boil turn off heat cover tightly let sit 1 hr. pour off water ,recover with hot water and bring back to a boil turn heat down to a simmer. let simmer 1 hr. salt and season let simmer 1 more hour. adding water when needed.
A ham hock added when salt and seasoningare added just makes them more flavorfull. Good luck jim b

No, they are fine. Beans just do that when they start to simmer, for some reason. At least, I've been cooking them for 40 years and nobody has been poisoned yet. lol
