there are basically 5 main reasons:
1. For someone to earn lots of money from the conference
2. International aviation safety and conformity
3. For vendors to show their products
4. For Companies to see what new products are out there
5. Public awareness of aviation safety and technology

So pilots everywhere are consistent in how they talk to the tower, land, have their lights on, etc., otherwise pilots would have to know the rules (and maybe languages) for every country they fly to, and that would make for lots of mistakes and accidents.

This way, everybody just agreed on one set of conventions and they all follow it.
