This simple soup is ready in about 40 minutes; only five ingredients means it's easy; it is delicious and nutritious!
INGREDIENTS:
16 cloves garlic, peeled
4 (14 oz.) cans reduced sodium chicken broth
3 potatoes, peeled and cubed
3 carrots, peeled and chopped
1/3 cup heavy cream
salt and pepper to taste
PREPARATION:
In large saucepan, combine garlic, broth, potatoes, and carrots. Bring to a boil, then reduce heat. Cover saucepan and simmer for 20-25 minutes until vegetables are very tender. Cool 10 minutes.
In blender container or food processor, process soup, 1/3 at a time, until smooth. Pour the soup back into the saucepan and add cream, salt and pepper to taste. Heat thoroughly, but do not boil. 4 servings

Homemade chicken soup with or without noodles is great.
My easy version is to place a whole chicken in a large pot just cover with water & simmer on low for about 3 to 4 hours I then remove the chicken from the pot to cool & I then add one onion chopped & two or three cloves of garlic chopped or a few spoons of garlic powder & two or three chopped stalks of celery & add about a pound of diced carrots some salt & pepper to taste. Let simmer while you debone the chicken. If adding noodles I always add about 2 cups of wide egg noodles & let them cook for about 8 minutes before I add the chicken back in. All you do is cook till noodles are done & enjoy.

Onion soup is easy...finely chop, in slices 2 sweet onion (Valida, or Spanish).
Saute in a little butter until softened add 2 tbsp of flour stir to coat onion.
Add 6 cups of water and flavour with veggie stock powder (or use liquid stock)
Bring to boil, reduce heat, stir occasionally, let simmer 15 minutes.
Optional will be to add 1/4 cup sherry or dry red wine.
Now you can eat it plain or turn it into french onion soup

That carrot soup sounds good.
I make potato soup.
melt 2 pats of butter in a cooking pot on low heat.
add 1/2 cup of chopped sweet onion. Saute.
optional: add one slice of chopped ham, turkey or chicken at the end of cooking the onion.
add 2 cups of water. Place heat on medium.
add 3 fist size chopped potatoes.
add 1tsp. Italian herbs, 1/2 tsp. salt 1/4 tsp. pepper.
When the potato's are soft, lower the heat.
add 1 cup of cold water with 2 tsp of rice flour, cornstarch, or white flour mixed in. Stir as you mix in the milk.
This should thicken and give you a nice creamy potato soup.
Serves 2-3 depending on how large a bowl you use and if you are having a sandwich with. Add salt to your individual bowls if you need.
Use this recipe and replace the potato with broccoli, mushrooms, carrots, or pumpkin, etc. or a variety of vegetables.

any soup is easy to make from scratch
but my favourite is pea soup
boil 500g of frozen peas in half a litre of vegetable stock til cooked
then blend this to a liquid
bring back to the boil
serve with some olive oil drizzled on top and some shavings of parmesan cheese
it is low fat and really delicious and only takes seconds to prepare

Mixed vegetable soup.
Vegetables of your choice, dice or chop and cook in water to cover, add more water (and a stock cube if liked) or stock and herbs and seasoning to taste.
If using a microwave cook vegetables with a little water first, then add the rest.
Have chunky or liquidise, potatoes in the soup will act as a thickener if liquidised.
Leek and potato in chicken stock, or chicken stock cube is nice.

Mom's Potato Soup
8-10 large potatoes, peeled and diced
1 large onion, diced
4 stalks celery sliced
Water
6 cups milk
Salt and pepper to taste
In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.
Mom's Broccoli cheese soup
1/2 onion, chopped
1 bag frozen chopped broccoli
2 1/2 cups parmesan cheese
1 cup cheddar cheese, shredded
1 can evaporated milk
Saute onion until tender. Place in crockpot with broccoli. Just barely cover with water, cook 1 hour on high. Stir in milk and cheeses. Cover and allow to melt, then cook for one hour on low. Serve.

I start all my soups with frying onion and garlic and lean bacon in butter. then pick your main ingredient:- leek, parsnip, tomatoes, etc just add the main ingredient with a couple of potatoes to thicken, three or four stock cubes and simmer for 30 mins then put into a blender to make lovely healthy, additive free soup.can be frozen in small bags and use as required.

i made roast tomato soup last night and it was really easy and nice.
4 cups cherry tomatoes
2 celery sticks left whole
4 cloves of garlic, unpeeled, left whole
1 x 5oz pot of sour cream
1 tablespoon extra virgin olive oil
put veg and garlic in a roasting pan with the olive oil and roast on 200C for 1 hour. leave to cool. Blend until smooth and pour into a blender (incl. juices). blend until smooth, add the sour cream and cook in a saucepan until bubbling. Serve. yum!

Cheeseburger soup, you take cheese, cream and butter melt it in a pan, while this is melting brown about one pound of lean burger, drain off and fat from the burger, and add it to the melted cheese mixture, add milk if needed to make soup thinner.
