It seems that there are Irish evening classes in the Local Community College according to this article at 'nightcourses.com' "The hub of evening learning in Clonakilty is the local Community College. Phone the College on 023 33877. Be aware that the range of classes on offer is very extensive and includes: Computers, European Computer Driving License and Crafts. For language lovers there's French (beginners / advanced), German, Irish (all levels) and Spanish."

Clonakilty Community College comes under the County Cork VEC. A list of Adult Education Organisers is at the second site. The organiser for West Cork Region may be able to tell you about these classes or other classes in the area:
Vincent Ahern,
Sutherland Centre,
North Street,
Skibbereen.

Alternatively you can purchase the The 2006/07 National Guide to Nightcourses- Cork (02 Area) Edition which is available in bookstores, newsagents, filling stations and other outlets
