Engagement rings are the continument of a tradition in which the male would give his fiance a piece of jewelry in order to let the world know she is spoken for. Now we tend to use only rings for this symbolism.
As for what happens to them it depends. For financial reasons some couples may never have an engagement ring. Women may choose not to wear their ring all the time because of its high value, because it doesn't match their outfit (take a moment to laugh at this), because it no longer fits, or maybe its just getting cleaned. It is also popular now for the engagement ring to be combined with the wedding ring. Instead of a band the wedding ring may be two small circles that fit on either side of the engagement ring- giving it the appearance of one ring.
And a bit off topic- but the wedding band goes on FIRST- being closest to your hand. It is supposed to never come off (although most women do take it off at least to clean it) while the engagement ring technically no longer serves a purpose after marriage and can be removed at will.

In some European countries, the wedding ring is the same as the engagement ring and changes its status through engraving and the change of the hand on which to wear it. If the wedding ring is different from the engagement ring, the question whether or not the engagement ring should be worn during the ceremony leaves a few options. The bride may wear it on her left ring finger and have the groom put the wedding band over it. She may also wear it on her right ring finger. The bride may also continue wearing the rings on different hands after the wedding – this may prevent the engagement ring from scratching and scuffing. Another option is to have the main bridesmaid keep the ring during the ceremony – there are a variety ways to keep it: in a pouch, on a plate, etc. After the ceremony, the ring can be placed back on either the left or the right hand.

Some women choose to get a special set which fits around their engagement ring, or even to have the band and engagement ring welded together by a jeweler. Others put the engagement ring away so that their son or grandson may use the ring as a promise to the one they love. I've seen engagement ring turned into lovely necklaces and even wall mounted shadow boxes filled with wedding photos and dried flowers. What you or a significant other does with their engagement ring depends upon how much character and love you wish to display with it. If the ring is particularly nice, I urge you to set it aside for future generations. At the rate diamonds appreciate in value, the diamond bought today may be of such rarified sentimental value thirty years from now, that it truly is a prise worth being called an heirloom.

Most women wear both rings together. The engagment ring is supposed to be worn over the wedding band to protect it. A lot of women have the put together so that is one ring, but looks like 2.

Most women wear both rings. Some women never got engagement rings, or work in an environment that does not allow them to wear their engagement rings.
