make my famous schnitzal parmagana~my family can't get enough of it lol

you will need the following:

crumbed beef or chicken schnitzal
500g jar of tomato paste
around 4-5 large green and red capsicums,seeds removed, sliced in strips
1 onion,sliced
8-10 button mushrooms or more if you desire,sliced
shredded cheese ..

This is what I do...

empty the tomato paste into a bowl,
add 1 jar and around three quarters of water using the jar that contained the tomato paste,
you need to use your hands to get the lumps of sauce to blend with the water, pour into a pot bring to the boil then simmer,

while the sauce is cooking add a little oil in a frying pan ,fry the capsicum and onion until soft, add this to the sauce

start on the mushrooms in a pan using butter not oil, mushrooms soak up like sponges so use a decent amount, once done add mushrooms to sauce, cook the sauce on low heat for around half and hour to 45 minutes,,

when sauce is almost done,start on the schnitzals in a pan medium heat once everything is done serve schnitzal with a decent amount of sauce on top and sprinkle with shredded cheese and place under the grill to melt cheese,

you can serve this with chips,or mash potato and veges whatever you desire,
if you have sauce leftover, it's freezable so you can save it and use for next time,,
also you can do the sauce the night before if you want,refridgerate and just warm it up the following night if you do this it has an even tastier flavour as its had time to soak through

We take chicken parts (sometimes just drumsticks) and put in a glass baking dish add baby carrots and some chopped potatoes. Fill the dish with water, and add some seasonings to it. Stick it in the oven at somewhere between 400 and 450 for about and hour and a half to an hour and forty-five minutes. Remember to flip everything over after 45 minutes. (As you can tell it’s not really an exact science) Just watch it toward the end of the hour and a half. It's super easy and you can be doing so many other things while it's baking in there. You know it’s done when the meat starts falling off the bones when you move the pieces around. Serve with some Pillsbury rolls that you just plop on a pan and bake while you wait for the chicken to cool a bit. Makes a great meal.

My husband is loves this recipe. It is quick, easy, and versatile.

Zucchini Pizza (serves 4)

Olive oil, for drizzling
1 Pillsbury pizza dough
black pepper
1 cup ricotta
4 garlic cloves, minced
1 cup shredded mozzarella cheese
1 medium zucchini, sliced (like pepperoni)

Preheat oven to 400°F. Drizzle olive oil on one large cookie sheet. (I use a stoneware cookie sheet. I do not think that it makes any difference.) Then roll out the dough and season with a little pepper. Bake for 5 minutes.
In a medium bowl, mix the ricotta and garlic. When you remove the dough, cover it with the ricotta mixture, mozzarella, and zucchini. (or any other topping you like.) Bake 12-15minutes.
Cut into 4 pieces.
Enjoy!

Something that I really like that is super easy only has two ingredients:
Sundried Tomato and Oregano salad dressing (use a large bottle if you are cooking more than 2-3 chicken breasts)
Chicken Breasts (as many as you need)
All you have to do is place your chicken in a casserole dish or a baking dish. Pour the entire bottle of salad dressing over the chicken, and bake in the oven for 1-1.5 hours (depending on the size of the chicken breasts) at 350 degrees. The left over sauce is great on potatoes or rice! Hope you like it.

I have this recipe you make in your crock pot, home made macaroni & cheese. Its a hit with my husband, when i make it he'll eat the whole thing if i let him...here it is...

1 1/2 cups cooked elbow macaroni
1/2 stick butter
1 can evaporated milk
1 1/2 cups velveta cheese
pinch of salt (optional)

In a one quart crock pot, mix all ingredients listed above, stir, set crock pot on low for 1 1/2 hours, stiring once through cooking process. I will be done after 1 1/2 hours.

Garlic Parmesan Mashed Potatoes

We're a large crew, so I make a full recipe:

10 lbs potatoes (I prefer waxy, like Yukon Gold)
3-4 cloves garlic
1 lb hard parmesan cheese, grated
1/4 lb butter
1 cup cream
small bunch fresh chives, chopped finely (optional)

Boil potatoes, drain. Mash by hand. Dice garlic finely, or mash unto paste; add. Melt butter gently in saucepan with cream, add. Don't allow cream to boil. Add grated parmesan cheese, chives and stir gently. Sprinkle final handful of cheese on top of potatoes, and serve.

This recipe conquered a 12 year old who had refused to eat mashed potatoes since age 2. It also travels well in a crock pot for taking visiting.

sirlion steak with pepper sauce (packet)
Oven chips or oven small roast potatoes
Mixed salad with a dressing try olive oil, fresh lemon juice, thyme and basil (dried herbs will do)

Ice cream Carte dor..mmmmmmm

or simply:

Jacket potatoes with prawn mayo
or chilli (just lean minced beef, chilli & oxo)
