I'm going away on business and want to know for maintaining nutritional value, if it's better to cut fresh vegetables and freeze them and then cook them. Or cook the fresh vegetables then freeze. Last time I did cook & freeze and when I unthawed them they seemed to be a mess of slop.

you might try just par-boiling the vegs then freeze. that is how my grandma always did it...then cook rest of way after they don't seem t o mess that way.

Cut the fresh veg & freeze if you want to avoid the slop factor. As for nutritional value, it won't make any difference.

cook and then freeze in airtight container.

freeze it first then you are not heating it up twice.
