I went to the local supermarket and took a look at the Canned Vegetables. Aside from Spinach and Collard Greens, I could see NO nutritional information worth mentioning for ANY of the canned vegetables. No vitamin A, C, anything worth anything. Why do we buy them?

Some of you are missing the point.
There is NO nutrition in the cans.
So, what I really am asking is:
If you want to have something in stock for emergencies, and you want to spend $100 on a bunch of cans, wouldn't you rather spend your money on, say, cans of Ravioli rather than on cans that are basically empty? By the way, WHAT state in this country has a supermarket where there are no fresh fruit or vegetables?

For convenience, I guess.
I hardly use canned vegetables. There is no nutritional value in them. Also, preservatives may have been added to it.

Convenience. They don't rot if they sit on a shelf for 6 months.
Supply. Some states (areas, countries) are not blessed with the same agricultural resources as others. If they want a vegetable they don't grow, they have to import it, usually in cans.
Stock. If you've ever been in an emergency situation (like Hurricane Katrina, for example) where there is no power for your refrigerator or freezer--for days--and no food supplies immediately available after the crises except what you have on hand...those canned veggies will start lookin' mighty good. And the more you happened to stock up before hand, the less hungry you will be. Just a thought.

1) they're cheaper
2) they are often picked in season, at the peak of flavor. canned tomatoes are actually good. not nearly as tasty as homegrown tomatoes, but better than store-bought winter ones. also more convenient
3) all have fiber, at least and some have other nutritional benefits, such as vitamins a and c, depending on what vegetable and how they're processed. sometimes they'll even add vitamins as a preservative(remember- vitamin e is antioxidant, which helps to preserve food)

We buy them because we trust that the vegetables inside them have nutrition. Canned vegetables are so convenient for lazy bachelors too.

not everything is listed on the nutritional label!
we buy them because you might not have the money for fresh, or because we want them to last longer, and because they are pretty cheap and it's nice to know they are there if you need them. i don't have much room in my freezer, so frozens are basically out right now. so i buy canned because are picked at the peak of the crop and are very good!

Canned vegetables are not much different than fresh produce that has been overcooked like most Americans cook their vegetables. Besides, they are cheap and shelf-stable.

People eat canned vegetables because they last a very long time unopened. You never know when you have to have a certain ingredient.

Well if you think about it when you buy non canned veggies there aren't any nutritional information on them so its the same.

I never have.
But I know many many people do-out of ignorance, out of a desire for convenience over taste, nutrition, well-being.
Canned anything sucks!
